Indian Corn Muffins

Colorful cornbread made from whole grain is a welcome change from conventional cornbread. Try this Colorado-proud recipe using corn grown in native soil, watered by Dolores River water, and marketed by your neighbors. 1 C Bow & Arrow Indian Blend Cornmeal1 2/3 C flour4 ½ tsp. baking powder1 tsp. salt2/3 C butter, softened1 C sugar3 eggs1 2/3 C milkPreheat oven to 400.
Combine dry ingredients in a large mixing bowl.
Cream the butter and sugar in a small bowl.
Mix eggs and milk in a separate bowl.
Fold together all the mixtures completely; do not over-mix.
Pour into greased muffins tins and bake 22-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Serve warm with local honey and bite into a taste of home.
