Don't be surprised if the smell of basil, caramelized onions or pepperoni wafts through the air in downtown Dolores on Wednesdays.
That is the day that Monica Marty, a new resident of Dolores, sets up her mobile wood-fired oven in Dolores and offers her wood-fired pizzas for sale near the Pony Expresso coffee shop.
Marty can make any personal-sized pizza you would like and even offers a gluten-free crust.
A fire inside the oven crackled on Wednesday as the sky above threatened to snow, but Marty stayed nice and warm and she gently placed a pizza inside the oven, which is around 600 degrees.
"It doesn't have a chance to dry out at this temperature. Everything cooks so quickly, it has a ton of flavor," she said.
Marty also makes bagels in the oven, which are sold at the Pony Expresso.
"I appreciate being here in Dolores, people are willing to try new things," she said.
Marty and her husband Steve Marty, moved here from Torrey, Utah in September, along with their 10-month-old and 4-year-old sons.
"We moved here for the schools," Monica Marty said. "We fell in love with the community here."
Marty said Dolores is closer to family and is a lot bigger than Torrey.
Marty fell in love with the wood-fired oven after making one in her backyard with a friend in Utah. They would bake breads in the oven.
"It all started with a love for baking," she said. "We fell in love with everything about it."
That is when the idea came to purchase a mobile oven and take their skill on the road.
In addition to selling the pizzas at the Pony Expresso from 11 a.m. to 2 p.m. on Wednesdays, she also sells her pizzas at the Four Seasons Greenhouse Farmers Market on Saturdays from 10 a.m. to 1 p.m.
She offers a more traditional pizza menu on Wednesdays, but on Saturdays she tries to highlight some of the local ingredients sold at the market.
"I make a chard pizza and an artichoke pizza and a caramelized onion one," she said.
Marty said she loves having access to local ingredients.
Marty also does catering and travels to events to sell her pizza.
