Zucchini recipe good for kids

School is back in session. Wishing you a great 2012-2013 school year!

What little card costs nothing at all, and is one of your best back-to-school tools? Your library card! The library has a wealth of tools and services that support educators and students during the school year.

Zucchini. That one word this time of year can strike terror into our hearts and may cause us to lock our cars (which we have never done in Mancos) and avoid answering the door. Thanks to Jeanne Smith, the threat this fall is not so great. She has highly recommended a recipe from “America’s Best Cookbook for Kids with Diabetes”, by Colleen Bartley. It is noted that diabetes does not have to be a criteria for this delicious recipe! It is just doggone good and kid tested. MPL has this book.

Zucchini Boats

Preheat oven to 350 degrees

Use 9 inch square baking dish

1 clove garlic, minced

¼ cup diced onions

2 medium zucchini

2 medium tomatoes seeded and diced

2 tbsp low fat Italian dressing

¼ cup parmesan cheese

2 tbsp cooked bacon bits

Place garlic and onions in a small microwave-safe dish, cover and microwave on high for 1 minute or until softened.

Cut zucchini in half lengthwise and scoop out flesh, leaving a ½ inch shell. Place shells in baking dish. Cut the scooped out flesh into small cubes.

In a medium bowl, combine zucchini cubes, tomatoes and onion mixture. Spoon evenly into hollowed zucchini shells. Drizzle with Italian dressing and sprinkle with Parmesan and bacon bits.

Bake in preheated over for 15 to 20 minutes, or until vegetables are tender and cheese is melted.

Community Cinema: We are so fortunate to be included again in the Community Cinema Film screenings. “Half the Sky: Turning Oppression into Opportunity for Women Worldwide” is our first film of the season. There will be an opportunity for viewers to participate in a national engagement activity that will connect them to each other and the Half the Sky Movement. The national engagement activity asks viewers to “make a commitment” to take action for women and girls. We will collect that commitment, take a picture with it and post it to social media. This info will be shared with the change makers featured in the film. Please join us on Thursday evening, Sept. 13, 2012, at MPL in the meeting room at 7 p.m. Free and open to the public. Why not bring a friend?

There is a special showing, by community request, of “Precious Knowledge” on Thursday, Sept. 6 at 7 p.m. in the meeting room at MPL. “Disenfranchised high school seniors become academic warriors and community leaders in Tucson, Arizona’s embattled Ethnic Studies classes while state lawmakers attempt to eliminate the program.” Director Ari Palos. There will be a discussion following the film.
