After a recent expansion and rave reviews from supper club members, The Farm Bistro is now open for dinner from 6 to 9 p.m. Fridays.

“The first weekend was a very soft opening, but we got good reviews,” said Rusty Hall, The Farm’s co-owner and chef. “Sometimes people say it’s not possible to use these locally grown and sustainable products and make money, but we’ve bucked that trend a little bit.”

Over the last two years, members of their local supper club, which meets the third Saturday evening of every month, asked the owners why they didn’t serve dinner more often. And their new extended hours is a response to those requests.

“We will grow with our customers — we let the market tell us how to grow,” Hall said.

In an effort to serve a $50 meal for $20, The Farm has pared down it’s supper club meals and serves its weekend dinners family style.

In the winter, at least 40 percent of all The Farm’s lunch and dinner ingredients come from the Hall’s Seven Meadows Farm or other nearby farms and ranches.

Guests select from a dinner menu that changes weekly to reflect the various locally grown ingredients that are available throughout the year.

Saturdays remain open for private parties and its Supper Club. The third Saturday of each month, The Farm serves a multi-course meal for Supper Club members.

The next Supper Club dinner will be Saturday, Jan. 21.

The new dinner hours come on the heels of their August 2011 expansion and move to 34 W. Main St. that saw an increase in dining capacity from 16 to 60 seats.

“We’re proud of being able to offer more goods and services to be produced and made locally, and that allows our customers to have more of those locally grown and locally sourced goods,” Hall said. “And now that we’re a little bigger, we can be a better customer to some of our local farms.”

Lunches are still served Monday through Saturday.
